Caesarless Salad Recipe

This crisp and garlicky salad is very Caesarlike and yet totally vegan!  No anchovies or egg yolks.

  • 2 tablespoons flax oil
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1 head romaine lettuce, torn into bite-size pieces
  • 1/4 teaspoon salt
  • 1 tablespoon nutritional yeast
  • 1/4 cup walnuts, chopped
  • 1/4 cup red bell pepper, sliced

Combine flax oil, lemon juice, and garlic in a large salad bowl. Mix well. Add lettuce and toss until leaves are well coated. Sprinkle salt and nutritional yeast over lettuce and toss again. Add walnuts and bell pepper slices and serve.

Green Pea Hummus

Green Pea Hummus Recipe

This gorgeous hummus has fresh pea flavor and packs in the protein. peas

  • 2 cups fresh or frozen green peas
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons tahini
  • 4 cloves garlic
  • 2 tablespoons lemon juice
  • 2 tablespoons ground cumin

If using frozen peas, rinse and thaw prior to use. Blend all ingredients in a blender or food processor until smooth. Serve on a platter with crudités.

Serves 4

Crudités
Four cups organic raw vegetables, sliced for dipping such as carrots, sweet bell peppers, celery sticks and cherry tomatoes.
