Pea Hummus

Pea Hummus

This brilliant green dip is fresh and filling and perfect for entertaining. Serve with colorful vegetable slices as an appetizer or afternoon snack.

2 cups fresh or frozen peas

2 cloves of garlic

Juice of ½ lemon

2 tablespoons toasted tahini

salt and pepper to taste

1 tablespoon ground cumin

Optional: 1 tablespoon extra virgin olive oil

Mix all ingredients in a blender or food processor until smooth. Serve with carrot slices, celery sticks or slices of sweet red, orange or yellow bell peppers.

Serves 4
